Teriyaki Beef Jerky is very much a favourite snack all the world over. The good thing about it is that its made from lean beef that has been stripped of the fat, so the calories are minimal because of the low fat content (1g in 30g). But what’s the story behind this favourite snack food? What is Teriyaki ? Teriyaki is actually a cooking technique used by the Japanese, where the meat is broiled or grilled in a sweet soy sauce mixture. A very popular dish! Interestingly enough, the japanese tend to use fish for this technique, such as mackerel, tuna, salmon and trout. In the West, the technique is used on meats such as chicken, pork, lamb. (This is making my mouth water!). The Actual word “Teri” refers to the shine or lustre given to the meat or fish brushed with the sauce, where as the word “yaki” refers to the action of broiling or grilling the fish or meat. Teriyaki is a soy sauce, Orange juice and honey marinade that is used to soak the beef jerky in. Some people use worchestershire sauce and soy sauce, but this is not so popoular. What is Beef Jerky? Jerky is meat (Chicken, lamb, or beef) that has been cut into strips and marinated in a sweet sauce like teriyaki or barbeque. The meat strips are then dried or smoked or sometimes its just salted and dried in the sun. This gives a great meat snack that’s savoury or semi-sweet, and can be stored without being refrigerated. The Thing about jerky is that in order to limit bacterial growth, the meat must be dried quickly, hence the reason why the meat is stripped, and then dried in the sun. In my opinion, the best teriyaki beef jerky is the wholey natural type which has a minimum of chemical preservatives. There are some factory made types that consist of chopped and formed meat, but these types tend to be higher in fat content.
